the best gluten-free baking mix I have found
My daughter has celiac (a complete inability to eat any wheat rye barley and in her case oatmeal or any of their starches or glutens). Pamela's baking and pancake mix is a real heaven-sent product. It tastes good! Unlike some other baking mixes I have tried. It is easy to alter "normal" recipes using Pamela's mix to have great tasting baked products. The bag has good recipes and Pamela's products website has additional ones. I would recommend this product to anyone especially those who don't want to take the time to mix their own grains or want to keep it on hand for when celiac family or friends come to visit and you would like to provide a delicious easy to make treat.

Disappointed with this Pamelas product
I am surprised to be writing that I am disappointed in a Pamela's product having always been a fan. When the frostings came out I was excited to have a convenient source of frosting in a pinch. The directions were easy the prep a breeze but the final product fell short. The frosting was too sweet with an overpowering vanilla taste-and I love vanilla. I would have to say the vanilla tasted artificial since it was so strong. I make a beautiful vanilla buttercream and although I did not expect a final product of this caliber I expected better than what I tasted. Skip this product and take a few extra minutes to make your own.

Too sweet frosting mix; I'll make my own
I bought this mix because I thought it would be convenient to have on hand on the rare occasions when I bake a cake. But when I made it I found it much too sweet for my taste and I had to add a lot of my own cocoa to cut the sweetness. The mix is basically cocoa and sugar to which you add your own fat (cream cheese butter whatever); next time I'll just mix my own sugar and cocoa and save a little money.

Best GF bread mix at best price per pound
Let's face it: most store-bought gluten-free bread is absolutely terrible. This is the best-tasting bread mix for making fresh gluten-free bread at home. With this mix I find that if I activate the yeast before mixing the dough and then keep the dough extra-warm after I shape it I can get the loaf to rise just like wheat bread. Priceless!
It should be noted however this is *not* a good mix to use for pancakes or waffles even if you add your own baking powder. It is too starchy to make a good pancake or waffle and it tends to stick to the pan or waffle iron even when plenty of oil is used.
Update 12/25/2009: this mix is fantastic for pie crusts!

Pamelas Baking Mix
I love Pamelas Baking Mix. The 25 lb bag is quite large and the expiration is March 2 2010 only 4 months after my purchase. I will never be able to use that much baking mix in such a short amount of time. Not worth it.
